ILWACO — The Ilwaco Cider Company, owned by Vinessa and Jarrod Karnofski, held its official grand opening and ribbon-cutting ceremony on Saturday, June 29, the beginning for a cidery more than five years in the making, located at 116 East Spruce Street in Ilwaco.

Standing before dozens of friends and community members, the Karnofski family thanked the community for support in helping bring the cidery into fruition, with the goal of getting more people into Ilwaco’s downtown core.

“We couldn’t have done this without you,” Vinessa said before snipping the ribbon next to her husband, Jarrod, eliciting cheers and applause from the crowd.

The Karnofskis began refurbishing the space, which were formerly storage units, in 2017 for their future use as a cidery and tasting room.

The business had four ciders on tap on opening day, including Fisherman’s Flannel (a 6% alcohol semi-dry spiced cider with ginger, peppercorn, fig, allspice and cinnamon); Solitary Euphoria (a 6.5% dry effervescent cider with juniper berry, elderberry and grapefruit); Columbia Fog (a 6.5% cider featuring orange blossom honey, vanilla, lavender and Oolong tea); and Springrider Crab (a 7.2% cider featuring locally-harvested cranberries, lime and wildflower honey).
