The saloon will compliment the 17-room inn next door that they first began renovating in 2019.
“We’ve just come this direction with it,” Taylor said during a tour of the new saloon on Monday, Aug. 12. “We worked on it all year long to get to this point now.”
Backyard family fun
The motivation behind the saloon was to bring a unique experience to customers who frequented the Fireside Inn.
“We had seen in the hotel a lot of people leaving in the afternoon and night to go have a beer or dinner somewhere and their kids were going with them, so my partner and I thought we could add on,” Taylor said.
“It’s all built on a family-orientated premise, so the kids can be in here with their parents. We’re also dog-friendly.”
The saloon, which has a roughly 25-person capacity, features a dedicated picnic area for backyard fun, including yard games such as cornhole and horseshoes along with barbecue grills, fire pits and picnic tables. Outdoor heaters will be installed before the colder, wetter, winter months.
“We want everyone to have a good time,” Taylor said.
“A lot of people want to use it as a meeting place, and we’re fine with that too.”
Pizza cupcakes, eager patrons
The menu features standard pub fare, including wings ($6), jalapeño poppers ($6), onion rings ($6) and waffle fries ($6) as starters.
Among the unique items on the menu is a margarita pizza cupcake ($6), with “real mozzarella and imported Italian tomatoes, served in a brioche and sourdough bun.” The primary fare includes a selection of six paninis, including a ‘Fireside’ reuben, featuring cured pastrami, pickled peppers, pickled onions, sauerkraut with thousand island dressing on sourdough bread ($14). Vegetarian options include a ‘veggie’ panini (portobello mushroom, pickled onions, pickled peppers, cucumbers, Swiss cheese on sourdough).
“There is no oil-cooked food here, it’s all air-fried,” Taylor said.
The saloon will serve a selection of local craft ciders and beers, including Ilwaco Cider Works, Sisu Brewing Company, Buoy Beer and Public Coast Brewing. The beverages will be served in frosty, custom mugs utilizing a unique Bottoms Up Tap System, resulting in hands-free, smoother pour with less head and waste. The saloon is one of roughly 10 businesses in Washington to utilize the unique system.
Hours will be 4 to 10 p.m. daily, to start.
“We’re going to see how it goes,” Taylor said. “The phone has been ringing off the hook for people wanting to come and see; the curiosity is here. There’s nothing like this on the peninsula. We wanted something unique, and that’s what we have.”
