Queen of the Boletus finds a prize specimen

- NASELLE — Gloria Tienhaara of Naselle shows she is the queen of finding the biggest mushrooms around. She is pictured with a king Boletus mushroom. The king Boletus grows in deciduous and coniferous forests and is an edible mushroom commonly used in soups, pasta, or risotto. It is low in fat and digestible carbohydrates, and high in protein, vitamins, minerals and dietary fibre. Mushrooms are popping up all over thanks to recent rainfall. But you have to be quick to harvest Boletus — popular with worms and insects, when left in the wild they start getting holey within a day or two.
